I think almost everyone agrees that when they think of the holidays, food is one of the central images that comes to mind. I know it is for me.
You’ve heard me say before that we tty to choose sustainable products whenever we can. We compost, recycle, and try to reduce our footprint. So when this opportunity to share information about Tetra Pak and Pacific foods arose, I was excited to participate.
- Tetra Pak containers are made of 70% paper, a renewable resource, from selectively harvested, re-grown trees that are FSC (Forest Stewardship Council)
- Cartons use 1/3 of the packaging compared to cans
- The containers are easy to open and use, stack more easily on pantry shelves saving space and allowing for easier organization
- The unique packaging process maintains the flavor and quality of the foods, preserving the nutrients and allowing the product to taste as it should
- Containers are recycleable and result in 60% less landfill waste than cans
- Because the containers are re-closeable so you can use what you need and save the rest for later.
Among the products I received to sample was a container of Pacific Organic Pumpkin Puree. Pumpkin pie is one of my favorites for the Holiday season, so I decided to make pumpkin pie, or rather a batch of mini pumpkin pies.
These pumpkin pie bites were really easy to make:
One package refrigerated pie crusts
2 C Pacific Organic Pumpkin Puree
12 oz evaporated milk
2 eggs
3/4 C brown sugar
1/2 t salt
1 t cinnamon
1/2 t ginger
1/4 t cloves
Thaw pie crusts as directed. Preheat oven to 350. Combine pumpkin, milk, eggs, brown sugar, salt, and spices. Beat well with a mixer. Cut rounds of pie crust and press into mini cupcake pan. Spoon filling into crusts and bake 30 minutes.
